Apparently the building was a stone masons shed......kinda explains the stone trough and the stone laying down with a chevron type thing carved on it.....

That sounds like the most plausible explanation to me. They had a ready supply of suitable stones in the fort's defensive walls.
What about all of the 'cup marks' on the boulders within the fort? I presume that they must be natural.
