There's a whole lot of info on the flora and fauna of pre-history in Jared Diamonds book 'Guns, Germs and Steel', though looked at from the perspective of each continents/regions availability of plants and animals that had the potential for domestication (ie. zebras vs horses etc.). It's a fairly worldwide account and the rest of the book is an amazing read.
For something closer to home, there's a great account of Irish natural history in 'Reading the Irish Landscape' by Frank Mitchell and Michael Ryan though its more limited due to the restriction of the mammals in particular that could have crossed the land bridge from the UK that subsequently became submerged, until domestic animals were later shipped in.
