Two ways I am aware of... first they will degrade and I have personally found coins on standing stones which have "leaked" onto the stones colouring them and staining them. They are pretty much then welded on the stones.

Secondly and I freely admit I haven't seen this, but coins wedged into gaps on stones will expand and contract with temperature changes and if wedged tight enough can lead to low level fracturing of the stone.

The rollright stones T&Cs says:
"Coins and other objects should not be placed in crevices in the stones as they can harm the lichens and wildlife inhabiting the crevices and can cause chemical damage."
