I'll reply more later I expect (at work now so no time), but just on the subject of steep slopes prohibiting terracing, the incas did some amazing stuff in the andes. I had a quick look on google, but couldn't find a photo I saw a few years back. Did find this though:

We have some cultivation terraces listed WNW of Hexham - that may be worthwhile comparing with tor. Warden ? Somewhere near there. I've walked past, on the road, getting somewhere else, without stopping, going in the field, and seeing if I could find them. Neolithic, I think. Not far from an iron age hillfort, though, so may be later.
