Bloody good question! I've seen sandstone and grantite ones. Proportions? Dunno. Churchy ones have a habit of being sandstone (I think). These are more usually in boulders and single.

Most multiple ones I've been to are in bed rock and are granite.

Making a bullaun out of a highly porous rock, like coarse red sandstone, would be a bit of a waste of an afternoon. But then, maybe we spend too much time praising their cleverness, they must have also had a fair proportion on Neolithic prats!
